Slow cooker lover

As probably 90% of my clients will testify, I am a big fan of the slow cooker. I find a big stumbling block for my clients (and myself) is finding the time to cook ayurvedically. The second biggest stumbling block seems to be what to eat for breakfast once I’ve removed oats from the table but maybe that’s a conversation for the next blog!

This morning while I was boiling the kettle and brewing a cup of tea, I prepped and put on a pitta friendly fish curry. I think it took ten mins maximum. It will cook for 2.5 hours and then stay warm until I’m home for dinner this evening.

I have the James Wahl rice cooker which is basically an insta pot type of affair and you can get a good deal from amazon at the moment. But here’s the recipe:

 

1 clove of garlic

half yellow onion

1 tsp mild curry powder

1 tsp tumeric

1tsp cumin powder

1tsp coriander seeds

1tbp finely chopped fresh ginger

I put all of this on to sauté in the crock pot while I prepped the following:

2 loins cod

broccoli chopped into small florets

mange tout

opened a can of coconut milk

I then threw all of this into the pot and it’s on to cook now for 2.5 hours
