As promised to my insta friends, here is the recipe for the coconut cookies I made last night. Coconut is great for cooling pitta and keep the hangry feelings at bay, pitta is also pacified with sweet things, but just in moderation!
These are not vegan but I’m going to bash out a vegan variation this week in time for my retreat at the end of Feb and will post an updated recipe on social media once I’ve got the balance working.
1 cup desiccated coconut
1 cup self raising flour
1/2 cup melted butter (I’m going to try with vitalife and coconut oil this week)
1/2 cup brown sugar (I’ve also made these with maple syrup)
Optional: my son only likes these plain but I have also made them with tsp cardamom which I love and also with 2 tsp of rose water essence which is really great for pitta
Mix everything together by hand and then roll and press onto a baking sheet, this recipe should make around 16 cookies and if you’re pitta/Kapha and worried about the calories, they are around 125 calories a piece. Bake at 180 for 12 minutes
