Little sweet treats – Cardamom Cookies

I apologise for the lack of posting during lockdown. I’ll be honest, home schooling, dealing with the world, running my business and teaching online had my cup brimming over….but I have developed a few new recipes over the weeks and here is one for some DELICIOUS teeny cardamom cookies for when you need a little sweet fix but you’re being good (just don’t eat 12, trust me, it is easy to do).

Ingrediants

I cup SR flour

1/4 tsp baking soda

1 teaspoon of cinnamon

3/4 teaspoon cardamom

1 egg

1/2 cup brown sugar

1/2 cup melted butter or coconut oil

Mix the dry ingredients together and then in another bowl beat the egg, mix in the sugar and melted butter and mix up well. Add this to your dry bowl and make a batter.

roll teaspoon size balls and then press onto your prepared baking tray, don’t be tempted to make them big, they will spread too much.

Bake at 180 for 10-12 mins (I go for 10 so they are soft in middle)
