Christmas Cookies with an Ayurvedic spin

I’m typing this whilst baking soda bread and trying out a Christmas cookie recipe to have on the beach tomorrow morning when we will watch the sun come up on the Winter Solstice after taking a dip in the ocean

So I thought I’d share the recipe on here as I haven’t posted anything for a while…then I realised that all I seem to share is cookie recipes! 😂 Let me know if anyone would like a nice boring recipe for my slow cooker kitchari or dhal and I’ll get on the case!

Anyway here it is, Christmas cookies with Ayurvedic sweet digestive spices, great for vata peeps, ok for pitta as long as there isn’t a huge pitta imbalance (oats and the spices are heating) and Kapha need to go easy on them as they are sweet with the sugar, raisins and maple syrup:

1/2 cup sunflower oil

1/3 cup maple syrup

1/3 cup oat milk

1/2 cup light brown sugar

1 tsp vanilla extract

2 and 1/3 cup SR flour

3/4 tsp baking soda

1/2 tsp baking powder

2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cardamon powder

2 cups oats

1 cup raisins

preheat oven to 180c and line two baking sheets

Mix all the wet ingredients together and then sieve in the dry ingredients (not the oats of raisins). Mix that and then fold in the oats and raisins. Place tbsp size balls on your baking trays and squidge down with two fingers. Bake for 10-12 mins unto they have spread and are a light brown colour. Allow to cool and enjoy with your friends on the beach after a refreshing sea swim
